It wouldn’t be Paris without the cheese. YUM! I ate more than my share when I was there a few weeks ago. It used to be rather difficult to find all those terrific French cheeses here in the states. Not so much true, anymore.

The gift of cheese is a great choice at the holidays. Exotic cheeses are fun and luxurious and far more nutricious than most gift basket fare. Cheese will also keep well for quite a long time, taking some of the pressure off the holiday waistline. The best thing about the gift of cheese is its affordability. The cheesiest gifts are pure cheese. No basket. No crackers. No funky mustard. Cheese. Cheese. Cheese. So even if your budget is under $30, you can put together a lovely and impressive assortment of delectible treats. And, of course, from there the sky’s the limit.

I read an article that purported to have the ten secrets to the greatest grilled cheese sandwich. Some of the tips were good and very true. For example, every true cheese lover knows that grated or crumbled cheese is better for melting than slices of cheese. And yes, a grilled cheese sandwich is definitely better when it is grilled with real butter. On the other hand, when the writer continued to state that the ultimate grilled cheese sandwich recipe included only two ounces of grated cheddar cheese I nearly fell of my chair. Maybe a grilled cheese sandwich for a child requires only two ounces of only one type of cheese. But the ULTIMATE grilled cheese sandwich certainly requires something more.

I generally use three types of cheese. I always use a bit of cheddar or American as a base. My other two choices are usually something ripe and unpasteurized like a Morbier or maybe even a sheep’s milk cheese. Sometimes I use something milder and nutty like a Comte. There is no true recipe for the ultimate grilled cheese – the key is to use really good cheese and plenty of it. Be creative. There is no wrong answer! And the same is true of mac and cheese, by the way. If you’re a cheese snob like me and can’t easily find your favorites, check out Shop igourmet.com
– They carry over 500 different cheeses from every corner of the world. They’ve got French, Italian, Dutch, South American, Scottish, Portuguese, Polish and Norwegian cheeses, and that’s just a start. Skiing. Maple syrup. Friendly people. Fabulous farm fresh everything. Great food. What’s not to like? Did I mention the shopping? Believe it or not, Vermont is a really great place to shop. Besides the abundunce of fabulous food, each little town is a stretch of funky retro yet totally hip and artsy stores.
One of my favorites is the Vermont Country Store. The name suits it well. It looks exactly like the old fashioned general store should look. It reminds me of the quintessential stores from movies like Baby Boom and Too Wong Foo. And their food department is not to believed. In addition to the old fashioned candy and baked goods we’ve written about before, they’ve got delicious and often hard to find locally produced cheeses.
